Sheer Khurma is a delicious Pakistani dessert that is traditionally served during Eid celebrations. Here is a recipe for making Sheer Khurma at home:

Ingredients:

1 liter milk
1 cup vermicelli (seviyan)
1/2 cup sugar (or to taste)
1/4 cup ghee or clarified butter
1/2 cup chopped nuts (almonds, cashews, pistachios)
1/4 cup raisins
2-3 green cardamom pods, crushed
1/4 teaspoon saffron strands
2-3 tablespoons rose water
Silver leaf (optional)
Instructions:

1 .In a large saucepan, heat ghee or clarified butter over medium heat. Add the vermicelli and cook until golden brown, stirring constantly to prevent burning.

2 .Add the chopped nuts, raisins, crushed cardamom, and saffron strands to the pan. Stir well and cook for 1-2 minutes.

3 .Add the milk to the pan and bring it to a boil. Reduce the heat to low and let it simmer for 15-20 minutes, stirring occasionally.

4 .Add the sugar to the pan and stir until it dissolves. Let the Sheer Khurma simmer for another 5-10 minutes, or until it reaches a creamy consistency.

5 .Remove the pan from the heat and stir in the rose water. Let the Sheer Khurma cool to room temperature.

6 .Once the Sheer Khurma has cooled, transfer it to a serving dish and garnish with chopped nuts and silver leaf (if using).

7 .Serve the Sheer Khurma chilled or at room temperature, as desired.
