How to make Indian Bombay Biryani Recipe


Bombay Biryani is a popular rice-based dish that originated in the Indian subcontinent. It is a flavorful and aromatic dish that is made with layers of rice, meat (usually chicken or lamb), and spices. Here is a recipe for making Bombay Biryani:


Ingredients:


1 kg chicken or lamb, cut into small pieces

3 cups basmati rice, washed and soaked for 30 minutes

4 onions, sliced

4 tomatoes, chopped

1 cup yogurt

2 tbsp ginger-garlic paste

2 tbsp red chili powder

1 tbsp coriander powder

1 tbsp cumin powder

1 tbsp garam masala powder

1 tsp turmeric powder

1 tsp black pepper powder

Salt, to taste

1/2 cup oil or ghee

1/2 cup fried onions

1/2 cup chopped coriander leaves

1/2 cup chopped mint leaves

1 tsp saffron, soaked in 1/4 cup milk

2-3 bay leaves

4-5 cloves

4-5 cardamom pods

1 cinnamon stick

4 cups water

Instructions:


1. Heat oil or ghee in a large pan and fry the sliced onions until golden brown. Remove half of the fried onions and keep aside.


2. To the remaining onions, add the ginger-garlic paste and sauté for 1-2 minutes.


3. Add the chopped tomatoes and cook until they are soft and mushy.


4. Add the chicken or lamb pieces, yogurt, red chili powder, coriander powder, cumin powder, turmeric powder, garam masala powder, black pepper powder, and salt. Mix well and cook until the meat is cooked through.


5. In a separate pot, add the soaked rice, water, bay leaves, cloves, cardamom pods, cinnamon stick, and salt. Bring to a boil and simmer until the rice is cooked and the water has been absorbed.


6. Once the meat is cooked, turn off the heat and set aside.


7. In a large pot or deep dish, layer the cooked rice and meat mixture, starting with a layer of rice, followed by a layer of meat, and then another layer of rice.


8. Sprinkle the fried onions, coriander leaves, mint leaves, and saffron milk over the top layer of rice.


9. Cover the pot or dish with a tight-fitting lid or foil and place on a low flame for 10-15 minutes.


10. Remove from heat and let it rest for another 10-15 minutes.


11. Fluff the rice with a fork and serve hot with raita or salad.
